A New Tradition?

I was able to make a quick trip home for Easter. Friday night and Saturday dad, mom, Erica, and I just hung out and enjoyed the beautiful spring day. Later in the evening mom and I took a nice walk, which is what the above picture is from.
Sunday, after church in Roseau, we headed to Grand Forks to meet my aunt Gwen, uncle DeWayne, cousin Crystal, Grandpa, and uncle Dan. Since our traditional meeting place, Royal Fork, is now closed, we met at the Golden Corral. (Another buffet.) It was a good time to catch up and just enjoy each other's company. Erica sleeping in the car while I was driving....I was laughing so hard because she had wrapped her jacket around her head-I think to sort of act as a pillow and drown out the music/crazy car noises my car makes. :) It was entertaining anyway.

I Think Spring Forgot to Spring

Snowy March Monday

It decided to snow today. A lot of snow. This first picture is at 1:30, the second at 2:00, and the last three at 3:00pm. Right now I'd say we've received around 4-6 inches and we're supposed to get a total of 12-14. Merry Christmas! It's been another relaxing day of baking, cleaning, reading, and snow watching. Oh yes, and listening to sermonettes from Amber's blog www.seekingafirmfoundation.blogspot.com. You should check it out-they're super solid. (For some reason it wouldn't let me comment on them today, Amber....so this is my response to them....thanks for sharing such solid truth that needs to be preached more.)



This is taken through the screen that goes out to our little deck. As you can see quite a bit has already accumulated on top of the box of water bottles sitting on the deck.

how FAR will you GO?

I just realized this evening that the Fargo Half Marathon that I'm running in is only 40 days away! It's pretty exciting stuff. I really think, with a little training, anybody can do it. It's like one of the greatest experiences to run with so many people and to have so many people cheering you on...it gives me goosebumps thinking about it! (This is Leah and I at the Grandma's Marathon in Duluth last June...this is when the slight race addiction all began! It really is just a ton of fun.)

The Finished Product

Remember that Apple Carrot Oatmeal Flax Bread dough? Well, here is what the finished product looks like....kind of funky, I know, but it is delicious! If you care to try it out for yourself, here is the original recipe and how I adjusted it:

Original:

• 1/2 cup butter
• 1 cup sugar
• 2 eggs
• 2 cups all-purpose flour
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 1 teaspoon ground cinnamon
• 1/2 teaspoon ground cloves
• 2 apples - peeled, cored and chopped

Greta's version:

• 1/2 cup butter
• 1 cup sugar
• 2 eggs
• 1 cup whole wheat flour
• 1 cup rolled oats
  
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 1 teaspoon ground cinnamon
• 2 tablespoons flaxseed meal
  
• 2 apples - peeled, cored and chopped

Bake at 350 for appx. 45 minutes to an hour. Enjoy!
